Luxury British chocolatier and cacao grower Hotel Chocolat has announced the re-opening of Rabot Hotel on the island of Saint Lucia from September 1st 2020.

Previously known as Boucan (the Creole word for a traditional cacao drying shed), the hotel is reopening under a new name: Rabot Hotel, paying homage to the grounds of the beautiful cacao Rabot estate it resides in since 1745, an organic, sustainable 140-acre cacao farm on the Caribbean island of Saint Lucia.

Rabot Hotel comprises of 14 private eco-lodges and an open-air restaurant, bar and spa. Set in the lush nature of a UNESCO World Heritage Site, it’s a place where the sounds of nature replace the noise of day-to-day life, stimulating and inspiring relaxation like no other place on earth overlooking the islands iconic Pitons. The hotel reconnects guests with nature by way of open-air architecture and sustainable earthy materials.

The award-winning Rabot Restaurant is inspired by the West Indies and Britain, serving contemporary dishes and cocktails with roasted cacao used as a subtle savoury spice and garnish. Hotel Chocolat run a sister restaurant with a similar menu within the oldest food market in London, UK: Borough Market.

Rabot Hotel guests can learn more about the cacao bean through the signature Tree-to-Bar Experience – starting with picking a cacao pod from the cacao groves, grinding the nibs and finishing with a hand-crafted bar of chocolate.
