The Evolv Collection is set to expand its Chop House & Tavern brand with two new openings in Birmingham and New York, marking a significant step in the group’s growth and its first international Tavern location.

Led by CEO Martin Williams and founded by the late Sir Terence Conran, the multi-award-winning hospitality group will launch Stories Tavern in Birmingham on 27 April 2026, followed by Queens Tavern at Hudson Yards, New York, on 4 May 2026.

The expansion follows the recent openings of Liverpool Street Chop House & Tavern and Paternoster Tavern in London’s St Paul’s district, further establishing the Tavern concept within the group’s portfolio.

Tavern Concept and Pricing

A central feature of the Tavern format is its pricing strategy, with all venues offering £5 pints throughout the day across a selection including lager, IPA and Guinness, served in traditional tankards.

Birmingham Opening: Stories Tavern

Stories Tavern will be created within the ground floor space of 24 Stories, formerly known as Orelle, with the existing downstairs bar undergoing a transformation. The design draws on 17th and 18th century taverns, developed in partnership with historian Ron Cregan, known for his work with Mulberry and The Maybourne Group.

The scheme incorporates dark wood palettes, red and blue tones, brass detailing and decorative elements including nautical flags and antique prints. An outdoor terrace will also be introduced as part of the project.

International Expansion: Queens Tavern

Queens Tavern, located at 20 Hudson Yards, New York, will open shortly after the Birmingham site, representing the brand’s first venture outside the UK. The venue will follow the same Chop House & Tavern model, focusing on accessibility and a British-influenced hospitality approach.

Stories Tavern and Queens Tavern will join Liverpool Street Chop House & Tavern and Paternoster Tavern as part of a growing Tavern portfolio within The Evolv Collection.

The Tavern concept reflects Sir Terence Conran’s original vision of celebrating London’s heritage through accessible hospitality formats. Stories Tavern is scheduled to open to the public on 27 April 2026.
