GAIA Mayfair is introducing The Bar at GAIA, the brand’s first standalone cocktail bar concept globally and a new extension of its London hospitality offer.

Located on the first floor above the restaurant, The Bar at GAIA has been developed as a dedicated drinks-led space within the GAIA Mayfair setting. While food remains central to the brand’s Mediterranean restaurant experience, the bar places greater focus on cocktail craft, evening rhythm and the social role of the bar.

A Drinks-Led Extension Of GAIA Mayfair

The concept is rooted in the same values that shape GAIA’s restaurant offer, including simplicity, generosity, quality and personal hospitality. The upstairs setting introduces a separate but connected experience, designed around cocktails, music, atmosphere and the transition between dining and late-night socialising.

Open daily from 4pm, The Bar at GAIA is intended to serve a range of occasions, from early evening drinks and post-dinner gatherings to industry meet-ups, music-led nights and later movement into NYX as the evening develops.

A Modern Vision On Traditional Craft

The opening is accompanied by a new cocktail menu titled “A Modern Vision on Traditional Craft”. The menu has been designed to highlight the natural character of its ingredients, combining considered technique with contemporary presentation. Seasonal produce, refined textures and understated serve styles form part of the offer, reflecting the ingredient-led approach associated with GAIA’s kitchen.

Four guest favourites will remain on the menu under the LEGACY section, preserving established signatures while introducing a new generation of cocktails shaped around contemporary cocktail culture.

Music, Atmosphere, and Late-Night Hospitality

Beyond the drinks list, the bar is structured around a series of staged moments. The journey upstairs forms part of the experience, while music is intended to evolve through the evening. Service has been positioned as personal and familiar, with each cocktail approached through balance, precision and purpose.

As London’s first dedicated standalone Bar at GAIA, the opening extends the GAIA Mayfair experience beyond the dining room. The concept brings together dining, drinking, atmosphere, music and late-night hospitality within the broader GAIA setting.
