Zambrero has opened its first restaurant in Scotland, launching in Glasgow’s West End and marking the brand’s largest site in the UK to date.
The new restaurant at 333 Byres Road opened on Saturday 7 February, creating 15 full and part-time roles. The site offers dine-in and takeaway options, with seating for more than 40 customers. The Glasgow opening forms part of Zambrero UK’s ongoing expansion, while its Plate 4 Plate initiative is delivered in partnership with Rise Against Hunger.
Menu And Format
The modern Mexican restaurant group is known for burritos and bowls, alongside tacos, nachos and quesadillas. Menu options include slow-cooked meat fillings as well as vegetarian and vegan alternatives, catering to both quick-service and more relaxed dining occasions.
The Glasgow site follows the launch of a delivery kitchen near Scotland Street in September 2025, which the company reports was well received by residents, commuters and visitors.
Plate 4 Plate Initiative
Central to Zambrero’s model is its Plate 4 Plate humanitarian initiative. For every burrito or bowl purchased, the brand funds a nutritious meal for someone in need in the developing world via its charity partner.
Franchise Expansion
The new restaurant has been opened by franchisee Dan Hawley, who previously operated four Zambrero restaurants in Australia before relocating to Scotland with his family.

Globally, Zambrero operates more than 350 restaurants across Australia, Ireland, New Zealand, the USA and the UK, and is the largest Mexican restaurant franchise in Australia and Ireland. Since launching in London in 2021, Zambrero UK has expanded to sites in London, Manchester, Birmingham, Reading, Essex and Glasgow. The company is targeting 100 UK restaurants by 2030 through its franchise programme.
