This November, Fables & Company – the creators of Plume in Covent Garden and Finch in Brixton – will open its third venue, Quill, at Borough Yards. Quill is set to be the brand’s largest space yet, bringing a fresh approach to wine bars by focusing on accessibility and the art of storytelling through wine.

Located near the historic riverside gateway to Borough Market, Quill spans 2,000 square feet, offering 75 covers across an interior arch and outdoor garden. Inside, the design evokes the feel of an eclectic wine cellar, complete with artworks and exotic wines collected from around the globe. Outside, the space channels the charm of an English garden, creating a welcoming atmosphere.

Andrew Gray, founder of Fables & Company, is steering Quill’s wine list in a more adventurous direction, building on the offerings at Plume and Finch. The focus will be on fine wines at reduced margins, allowing customers to enjoy prestige bottles at accessible prices. English wines remain central, with an expanded emphasis on still wines alongside the celebratory bubbles that have become a hallmark of Plume. The goal is to introduce customers to lesser-known wines and offer new twists on familiar varieties, with a philosophy of “accidental education” driving the experience.

Quill’s culinary offerings have been curated by Rob Wade, Fables & Company’s Culinary Innovator, whose past experience includes time at Chez Bruce, Soho House Group, and La Truffière in Paris. The menu celebrates British cuisine, featuring dishes like ‘Sea Bass on a Bed of Leeks & White Miso Beans’, a hearty ‘Duck Confit Burger’, and the group’s signature ‘Golden Boy’ grilled cheese sandwich. The bar’s twist on the hotdog, a ‘Boar Hotdog with Bacon Jam & Pickles’, is poised to rival Plume’s popular ‘Pork & Cheese Hot Dog’.

Quill joins other premier bars such as Cahoots and Cafe Francois in Borough Market, as the area continues to grow into a hotspot for high-end dining and nightlife.

The bar’s design is being developed in collaboration with renowned designer Sophie Bicknell of Studio Bare, blending historical and contemporary elements within the railway arches near London Bridge station. Adorned with artwork and objects that spark conversation, the venue will serve as a space for relaxation and socialising. Quill will also continue Fables & Company’s tradition of hosting interactive events, including ‘Secret Notes’, where patrons pass anonymous notes between tables, and complimentary tarot readings. Guests can also enjoy nights dedicated to traditional card and dice games.

Andrew Gray, founder of Fables & Company, shared his excitement for the new venue: “Quill embodies the same spirit as our sister bars, advancing our experience from Plume and Finch. The tradition of storytelling is central to our identity, and being near Shakespeare’s Globe has motivated us to weave even more immersive experiences into our creative product. This is a really exciting site, with oddities in wine and intensely flavoured food, but most importantly it will be fun!”

Quill’s opening marks 14 years since the inception of Fables & Company, previously known as Grays and Feather.
