This summer, Andaz London Liverpool Street is featuring a new culinary collaboration at its Eastway Brasserie, hosting a three-month residency with Argentinian chef Cristian ‘Chino’ González. Having launched on 2nd June, the seasonal menu showcases González’s fire-forward cooking style and a diverse array of dishes influenced by his background in Buenos Aires cuisine and global culinary experience.
González began his professional journey in acclaimed international kitchens. His early training included time at Mirazur, a three-Michelin-starred restaurant in the South of France under Mauro Colagreco, and Lasarte-Oria in Spain’s Basque region, where he worked with Martín Berasategui. His South American influences were shaped in renowned kitchens such as Malabar in Lima, La Huella in Uruguay, and Mostrador Santa Teresita in Argentina, where he collaborated with chef Fernando Trocca.

At Eastway Brasserie, González presents a menu that draws on this varied experience, combining classical culinary methods with open-fire grilling and fermentation techniques. Dishes include seabass ceviche served with tomberries and puffed quinoa, and grilled thin skirt steak finished simply with chimichurri. A sirloin milanesa is accompanied by pesto taglioline for a twist on a traditional preparation. Another option, handmade orecchiette paired with clams, pork sausage, and cime di rapa, blends land and sea flavours in a single dish.

Among the smaller plates and snacks are tapioca buns with sweet chilli and parmesan, as well as a deep-fried shrimp empanada. Both pay homage to street food commonly found in Buenos Aires. Desserts continue the theme with a focus on familiar yet elevated tastes, such as a dulce de leche mousse paired with praline and banana.

To pair with the menu, Eastway Brasserie will also offer a rotating selection of wines from Argentina. The list will include a variety of styles, from mineral-driven whites to robust reds, each selected to complement the bold and layered flavours of the dishes.
The residency reflects Andaz London’s ongoing initiative to spotlight emerging chefs and present culturally resonant dining experiences. Whether local visitors or hotel guests, diners can anticipate a menu that pays tribute to Latin American culinary traditions while offering a fresh and contemporary dining experience.
